Cooking Question?

Does it really make a difference to use unsalted vs. salted butter when cooking? Why?

I don't know the answer, but I heard someone on a cooking show say that they use unsalted butter so that they can control how much salt they put in whatever they're making.

It makes a really small difference. The only difference is the increased amount of salt in your baked goods. This is a small amount most people can't taste the difference. It is a taste factor. If you use salted butter when it calls for unsalted your recipe will still turn out.
